For over 50 years, the Calvey family on Achill Island have been producing and crafting the most exquisitely tasting lamb meat from their extensive farm on Achill Island, creating unique, handcrafted, genuine Achill Mountain Lamb products.
A rare quality in the meat market today, all Achill Mountain Lamb meat is sourced from Mayo Blackfaced Mountain lambs who are bred and raised on Achill Island and butchered in Calvey’s on-farm abattoir and butchery. Calvey’s flock of sheep and rams are 100% genuine pure-bred Mayo Blackface Mountain breed. Their flock of sheep have evolved on Achill Island down through generations of the Calvey family since 1866.
Martin Calvey started Calvey’s business in the early sixties when he began butchering and creating the brands Achill Mountain Lamb and Achill Lamb. He has been selectively breeding his unique flock and using exactly the same artisan skills Calvey’s today guarantee the finest quality lamb meat.
When deemed ready by Martin’s expert hand, the lambs are traditionally butchered and crafted in the family-owned and run Calvey’s Abattoir & Butchery. Calvey’s breed to give their Achill Mountain Lamb carcasses a high quality lean finish, healthy pinky red in colour, with a firm, deep texture and a very light skim of yellowish fat (more flavour than white) with marbling throughout, ensuring a unique, delicate and succulent flavour when cooked.
“Over many, many years, our sheep have grazed freely on thousands of hectares of open Achill Island landscape and on part of the Wild Atlantic Way where the sea mist lingers. They feed entirely on a natural diet of mother’s milk, the natural forage of heathers, wild grasses and herbs. Our lambs are the genuine flavour of Achill Island and the Wild Atlantic Way, where our Achill Lamb products are certified organic by Organic Trust.
