Irish Food Writers’ Guild recognised Calvey’s Achill Salt Marsh Lamb with its prestigious Food Award in 2022.
For over 150 years, the Calvey family have farmed on Achill Island, with several generations working side-by-side. Their late-season salt marsh lamb (the coveted agneau de pré-salé) is born in summer and grazes on salt-marsh plants and wild herbs in the rare machair habitat along the sandy shores of Keel.
The result?
A uniquely terroir-driven flavour — what the Calveys describe as a “heather-sweetened, seaside-seasoned taste.”
Unlike most mainstream meat production systems, the Calveys oversee every stage of the process. With their own on-site abattoir — the last remaining one on Achill Island — lambs do not endure long transport or unfamiliar environments. Instead, they remain on their home ground, cared for by familiar hands.
