This is a very traditional recipe which needs low and slow cooking. Mutton suits it perfectly. The meat and vegetable are layered up in the pot and a little pearl barley thickens the stew. Have them all sliced up and ready to go before you build the dish.
The dumplings are really delicious. You may not have cooked with suet before, but it makes them really fluffy. The trick is not to let them come off the boil when you are cooking them in the gravy at the end. There are vegetarian suet options available. This will serve 4 hungry people.
